5 Cozy Slow Cooker Beef Recipes for Busy Fall Nights
Fall is on the way and cooler temps mean we want cozy but simple recipes to feed our families. I know you are still coming in late from practices and games or meetings.. We are all busy. The crockpot really is the unsung hero of the fall season.
I wanted to share a few of our favorite recipes with your family so that you can truly set it and forget it. Its so nice to walk into the house at the end of the day and smell dinner that is almost ready.
SLOW COOKER BARBACOA- this recipe from Beef Loving Texans is a super versatile shredded beef with a delicious Mexican flare. Very Texas. This recipe calls for a chuck roast but you could throw in stew meat (its just chopped up chuck) or any other roast you have on hand. Serve with tortillas, lime, cilantro and diced onion.
SLOW COOKER SMOTHERED STEAK I often do a variation of this and will add a sliced onion and lb of sliced of mushrooms on top when it goes in. Don’t worry about the tenderizing part, our cubed steak comes already done. Basically you will coat in flour and pan fry, throw in the slow cooker for several hours. When it’s done, serve over noodles or mashed potatoes.
EF WEEKNIGHT HERO: French Dip Sandwiches This easy French dip is based on a chuck roast and it is perfect for a crowd. We serve it often.
EF CROCK POT BEEF TIPS this has a very similar flavor profile to the smothered steak but uses stew meat or chopped up chuck roast. Very much a dump it and come home to a nice smelling house. Don’t be scared to add carrots or potatoes for a thicker stew vibe.
CROCK POT TACO SOUP with a side of cornbread, shredded cheese and a dollop of sour cream- its perfection.
