As a busy farm mom, I'm always looking for easy, hands-off dinner ideas that the whole family will love. This one hits the spot every time. It's also a huge favorite for large groups.
We make this for our Farm Day field trip volunteers and for a church potluck but also just as an easy crockpot meal.
Weeknight Hero: Easy French Dip Sandwiches
This is a weeknight "fix it and forget it," slow cooker recipe and even better- it's another idea for your chuck roast!
If your family is tired of the same old Sunday Roast recipe, this is a great way to use the cut and we promise your kids will go crazy for it.
This roast will cook all day in onion, soy sauce, worcestershire, and broth and what comes out will be one of the best sandwiches you will find.
Evridge Farms dry aged chuck roast (3-5lbs)
2 onions, sliced
2-3 cups beef broth
¼ cup Worcestershire Sauce
¼ cup Soy Sauce (or Coconut aminos)
6-8 slices of Swiss Cheese
loaf of French Bread
Pat Chuck Roast dry and season with salt and pepper
Sear all sides in hot skillet (I love a cast iron for this)
Add chuck roast to slow cooker
Add sliced onions on top
Pour on broth, Soy Sauce, and Worcestershire sauce
Cover and cook on low for 6-8 hours
shred beef and return to slow cooker with juice and onions
Slice french loaf and layer with beef, swiss cheese
If you like (we do), put open sandwich under broiler in oven for a few minutes to brown cheese and toast bread.
Slice and serve! Enjoy!
