This Cheeseburger Soup is a yummy alternative to chili or stew that every member of the family will love. It makes a great weeknight dinner.
Ingredients

1 lb dry aged ground beef

1 diced onion
-
2 cups shredded carrots (buy pre shredded for a shortcut)

1 clove minced garlic

2 cups beef broth
-
1 tsp salt

1 tsp pepper

2 lbs peeled potatos, chopped to bite sized

2 1/2 cups milk
-
2 Tbsp flour
-
8 oz Velveeta, cubed

4 strips cooked bacon, chopped up

1 cup shredded cheddar
Directions
In a large stock pot, saute your onion in oil and add in your ground beef.
Cook until browned. Add in shredded carrots, garlic, potatoes and broth.
Simmer for 2o minutes until potatoes are tender then add in 2 cups of milk and diced Velveeta. Stir and cook on low until melted.
Meanwhile, whisk together 2 Tbsp flour and remaining 1/2 cup of milk. Add that to the pot. Salt and pepper.
Simmer on low for about 5 minutes.
Turn off heat and serve it up. Top with bacon and shredded cheese. Enjoy!
