Our flat iron steak tacos are great for a quick weeknight meal or your weekend tailgate party. They are simple but tasty and will truly be a fan favorite.
The flat iron
steak is named for is uniformity in thickness and rectangular shape. It has really grown in popularity as a less expensive,
but very tender cut from the chuck, or shoulder, primal. The flat iron is great
on the grill but can be marinaded and seasoned much like a flank or skirt steak.
We recommend searing it at high heat and then finishing to medium rare at a
lower temperature.
Flat
irons are highly marbled, full of beef flavor and tender.
This easy steak taco recipe cooks up in under thirty minutes and is full of flavor. Add all of your favorite toppings and it's sure to be a crowd pleaser!
Mix together ingredients for marinade and place in a bag
Add flat irons to marinade and place back in refrigerator for 2-6 hours. I usually will make my marinade at lunch for supper that night
When you are ready to cook, heat a pan with a little oil. I usually just do this in my trusty cast iron pan but if you are cooking for a crowd or just enjoy firing up the grill, its perfect, too.
On medium/high heat, sear steak for about two minutes on each side.
Then drop the heat down to and cook until they reach 135 degrees internally. We love using a meat probe thermometer. It’s truly the best way to be sure your steaks are perfectly cooked.
Pull them off the heat and cover them in a foil tented pan for a few minutes to “rest.” This lets the juices distribute evenly.
Slice the steaks against the grain. Assemble your steak tacos with all of your favorite toppings.
