This casserole type weeknight dinner is a winner with the entire family and perfect for your St. Patrick's Day!
Weeknight Cottage Pie
This one is certainly a family favorite and a great use of ground beef.
1.5-2lbs potato (we sometimes use Yukon Gold but large russet types are great, too)
2 lbs ground beef
1 16 oz package of frozen mixed veggies
1 onion, chopped
4 Tbsp Butter
1 cup beef broth
3 Tbsp Worcestershire sauce
1 cup shredded cheddar
2 Tsp Thyme (fresh or dried is fine)
1 Tsp Paprika
2 Tbsp Olive Oil
Preheat oven to 375.
In large stock pot, boil potatoes for about 20 mins or until tender.
Meanwhile, in Dutch oven, heat 2 tablespoons of oil and add diced onion. Cook for 2 minutes or so.
Add in ground beef. Cook thoroughly until browned.
Stir in broth, veggies, Worcestershire, and thyme. Simmer for a few minutes.
While that simmers, lightly, drain and mash your potatoes. Add in butter and cheese. Stir together.
Add potatoes over meat mixture. Smooth out top and add sprinkle of paprika.
Place in oven at 375 for around 40-45 minutes uncovered.
